Circus Truck started with a simple idea: serve the kind of food you'd cook for your favorite people, in portions big enough to feed two.
For years, our little truck on West Green Street has been a fixture of Ithaca's lunch hour. Students from Cornell and Ithaca College, contractors on break, professors with twenty minutes between lectures, and visitors who heard about us from a friend — they all line up at the same window.
Everything is made fresh, every day. The burgers are hand-formed smash patties. The pasta sauces simmer on the truck. The sandwiches are stacked tall on bread we picked because it actually holds up.
We're cash only. We know it's old-school. But it's what lets us keep prices honest and portions huge.
